After harvesting, the vegetables are freshly placed in an acidic infusion. In this way, the vegetables get their special and tasty aroma, remain nice and crunchy and are therefore available throughout the season. Sour preserves are very popular throughout the Balkans and are traditionally served as an accompaniment to warm and hearty dishes such as home cooking, meat dishes such as goulash, various stews and soups. But the pickled vegetables are also very tasty and pure enjoyment with cold dishes such as vespers, cold platters at celebrations or as a snack in between and are full of vitamins!
